Cheesy White Sauce Pasta

  • Ingredients 
  • 20 ounces uncooked penne pasta
  • 4 tablespoons unsalted butter
  • 2 teaspoon minced garlic
  • 0.5 cup finely chopped onions
  • 0.5 cup sliced carrots
  • 1 cup cubed mixed bell peppers (cut into 1 inch cubes)
  • 2-1 tablespoons all-purpose flour
  • 2 cup warm whole milk
  • salt (to taste)
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 0.5 cup shredded cheddar cheese
  • a handful fresh basil
  • Instructions 
  • Cook uncooked penne pasta. Drain and keep aside. 
  • Start by heating 2 tbsp unsalted butter in over medium heat.
  • Once the butter is melted and slightly hot, add 1 tsp minced garlic and ¼ cup finely chopped onions and cook for a minute. Garlic adds a aromatic  flavor to the pasta, don’t skip garlic. 
  • Add ¼ cup sliced carrots, ¼ cup sliced mushrooms, and ½ cup cubed mixed bell peppers  and saute for a minute.
  • Now add 1 and ½ tbsp all-purpose flour and cook for a minute. Keep stirring continuously. All-purpose flour makes the best creamy sauce .
  • Set the heat to low. Pour 1 cup warm whole milk very slowly and whisk continuously using a wire whisk while pouring. This process is very important to get a creamy sauce so be careful while adding the milk.
  • Add salt to taste, ½ tsp freshly cracked black pepper, ½ tsp dried oregano, and ½ tsp red pepper flakes, and cook the sauce on low heat until it starts to thicken. Keep stirring continuously.
  •  ¼ cup shredded cheddar cheese and cook until the cheese melts.
  • Add the cooked pasta .
  • Cook on medium heat for a minute. Add some more reserved water from cooking the pasta if the pasta is too thick. Garnish with fresh basil and serve hot.
