Namak Paare Or Nimki

Namak para (or namakpare), also known as nimki  crunchy savoury snack eaten in the India. It is also referred as Mathri. 

  • Add 1 cup all purpose flour,
  • ½ tsp salt, ½ tsp carom seeds and 4 tsp melted ghee to a large mixing bowl. 
  • Mix all  the ingredients well using your hand. 
  • Add some  water at a time and mix to make a stiff dough. 
  • Cover the dough using a kitchen cloth and keep aside for minimum 15 minutes.
  • Knead the dough again until it smooth. Divide it  parts. Take one part and make a ball from it. Roll the ball to make a thick circle. Sprinkle little dry flour if the dough is sticking to the rolling surface. The dough should ideally not stick.
  • Cut the circle in long rectangles or diamonds using a knife or a sharp pizza cutter.Keep the cut namak para covered with a kitchen cloth until they are ready to fry.
  • Heat oil for frying in a heavy bottom pan or kadhai. 
  • Once the oil is hot, transfer a few namak para to the hot oil and simmer the heat to medium low. Fry on low medium heat until they are golden brown in color. Keep stirring them.
  • Once browned, remove from oil on a tissue lined plate. Cool completely and store in an airtight container for up to 15 to 20 days.
